The team of the Spargus Restaurant invites you to the 3rd Evening of Carthusian Cuisine.
At the Spargus Restaurant, nestled in the embrace of the historic Žiče Charterhouse, the team will host the third Evening of Carthusian Cuisine – a tribute to a tradition that continues to inspire us time and again.
Chef Andrej Smogavc, together with his team, will revive the flavors from the rich monastic heritage recorded in the book Monastic Cuisine. The old recipes will be interwoven with modern culinary interpretation to create a five-course tasting menu, where ancient flavors will meet contemporary approaches and techniques.
The evening will be complemented by selected wines from the Sanctum winery, grown on marl slopes above Loče. Their refinement and character perfectly align with the idea of the evening – seeking balance between the earth, humanity, and the present moment.
